(The best) PEPPER COOKIES (in the world)

So, it’s yuletide if you haven’t noticed. And one way we enjoy this time of year here at the studio is by baking and eating a lot of homemade christmas cookies. One particular favorite, is these pepper cookies. We enjoy them when the afternoon is getting long and we need a break with a good cup of strong coffee. All you foreigners reading the blog, get into the Scandinavian christmas feel and put on your baking apron:

PEPPER COOKIES ala Lagkagehuset

250 gr butter

250 gr sugar

1 teaspoon ground ginger

1 teaspoon ground cinnamon

1 teaspoon white pepper

1 teaspoon cardamom

1 teaspoon baking powder

1 teaspoon baking soda

100 ml (1 dl) doublecream

500 gr flour

Whip together the soft butter and sugar until it is all mixed up. Whip in slowly with a mixer, the doublecream.

Mix the spices, bakingpowder and baking soda with the flour.

Mix the flour mixture with the butter mixture until you have an even dough. Knead it with your hands. Roll out the dough until it matches the size of your little finger (one long roll might be a bit long, so cut it up) Cut the roll into little pieces 1 cm a piece, a give them a little push on the top. Put them on a baking tray, they can be put quite close together, and bake for about 8-10 min 200 degrees. Watch out that they don’t burn or go too brown.

Eat them all in one go! (Nooooo of course not – but be careful they’re addictive …. and remember how  much butter you used, eh!)
